Chips and Potatoes
Potatoes are on every menu and are popular with all ages. Frozen potato products offer flexibility in cooking, are great time savers and give consistent product quality every time. Shaped products such as spiral chips or lattice fries are very popular as well as being excellent plate fillers, but can only be economically and sensibly provided frozen. Nutritionally you can’t beat frozen chips, which can have as much as 33% more vitamin C than chips you cut yourself. This is because they retain their nutrients by being frozen so quickly.
Vegetables
The technology of freezing food has improved dramatically in recent years and it is now possible to freeze products in a matter of minutes. Vitamins are locked in at the point of harvesting and need no preservatives. Chilled vegetables can be up to two weeks old at the time of cooking, by which time much of the nutritional goodness has gone.
Pork Ribs
Highly specialised packing plants mean that frozen ribs are highly standardised, with regular portion sizes and the same number of ribs to the case each time. Not only that, the price of frozen ribs is less volatile than fresh, and of course there is no spoilage whatsoever. These factors mean that restaurants that specialise in ribs almost always choose frozen over fresh.
Fish and Seafood
Frozen fish and seafood sourced in its most sustainable and natural environment and then frozen in the shortest possible time ensures maximum freshness and ultimately the highest quality for chefs. Freezing stops all microbiological activity, including pathogens, and so the products are not subject to spoilage. Because frozen fish does not have to be flown to its destination the carbon footprint is much lower, and using frozen seafood or fish can be up to 25% cheaper than fresh, a major consideration for most businesses these days.

Many chefs who prepare pastry products from fresh use frozen pastry, due to the excellent quality of the products as much as the convenience.

Entrées
Frozen prepared entrées offer consistency of quality and preparation, perfect portion and cost control, as well as allowing a wider range on the menu. High value meals are easy to have on standby when using frozen, and offerings such as vegetarian and vegan can be stocked at low levels for last minute cooking.
Buffet
Flexibility is the key word here a stock of ready made appetisers and canapes allows the caterer to react to last minute changes in demand. Many items are thaw and serve, others reheat in moments, allowing response times that just wouldn’t be possible if prepared from scratch. And, of course, using frozen makes it that much easier to provide a wide selection of canapes.
Desserts
Frozen offers year round availability of seasonal prodicts – particularly strawberries and rasperries, two of the most popular dessert ingredients. Many desserts are fragile by nature, and if you have to transport them it is much easier to do so when frozen. Pre-portioned desserts offer the ultimate in flexibility and significantly reduce the chance of wastage.
